This engineering standard is part of a standard series for measuring the energy use of equipment for commercial kitchens. This part specifies equipment-specific provisions for determining the energy demand for electrically and gas powered convection steamers. This standard is intended to give the buyers of commercial kitchens the opportunity to select equipment which meets their needs and is cost-effective. DIN 18873-1:2010-07 is supplemented by requirements for determination of the energy use and water consumption under load during combined operation.
